Claudy’s Kitchen in NYC makes up to 5,000 empanadas a month, fulfilling delivery orders from customers across the U.S. Chef Claudia and her team make the empanadas from scratch — filling and folding each one. What started as an empanada business expanded to a permanent home in the Bronx — serving Peruvian dishes like lomo saltado, ceviche de pescado, roast chicken with pollera sauce, and its popular flan. Berroa’s dedication to making traditional Peruvian food that reminds her of home earned the restaurant a Michelin Bib Gourmand in 2021, leading to international acclaim.
