Nothing ever goes to waste at The Meat Hook in Brooklyn.
The shop gets their 1,200 pound meat delivery once a week and immediately starts breaking it down — which is truly a workout. Butcher-owner Brent Young takes a whole-animal approach to his business, and makes sure nothing goes to waste. What may not be a good fit for a retail cut gets sent over to their sister restaurant, Cozy Royale, for dishes like charcuterie and juicy 70/30 burgers.
